Fries are a basic stable in every cuisine. My favorite fries are the ones they make in Belgium, the place where most people agree they originated. The Belgian frite, is great because they cook them twice. The first time they are cooked it is for 3-4 minutes, enough time to cook the potato all the way through, but not enough time to crisp them up. They take the frites out of the oil and let them rest. The second cooking is just a couple of minutes and crisps up the outside without overcooking the inside. Then just add the sauce of your choice and VOILA! Many time we would just stop at a frite stand to get a serving as a snack.
